January Blog Follower Prize Winners...

As promised, I added the name of all new followers in January (who stuck around the entire month- yes I did go through and cross off people who "unfollowed")... I put the names on a list, and printed them then cut them out... we are getting HIGH TECH.

Those strips of paper were then folded, placed in a large votive or small vase - still not sure about that - the "container" was then shaken until 5 pieces of paper had fallen out - thus my 5 winners!

Blog Buddies Questions...


So apparently someone (Andrea @ Love Is...) did this and didn't really tell me I was tasked to answer and then ask the questions - but I am stoked! I love learning more about my blog buddies!

11 Things About Me:
1. I still watch One Tree Hill... just finished re-watching the whole series of Buffy the Vampire Slayer, and I like movies by ABC Family...
2. My family gets me something with a frog on it for like every holiday - because I guess frogs are my favorite animal - but really, they build up...
3. I love to buy old, worn down and forgotten things that I can make beautiful and love.
4. My favorite movie is “Knotting Hill” - really I think it’s just because of the “Whoopsy Daisy” line and the “I’m just a girl, standing in fromt of a boy, asking him to love me”...
5. My favorite Starbucks drink is a Soy (gross) Chai Latte with 3 pumps of Vanilla
6. I am lactose intolerant...
7. The one craft I can't do is Knitting... and I dislike Scrap booking - it takes forever!

Okay so I have most definitely been slacking on InstaFriday, which is silly because I love it! Mostly because I love Instagram, it's just too fun!

There are just some days when you don't want to get outta bed.

Look at my living room! I got home yesterday and decided that my apartment looked like it was inhabited by some frat guys - needless to say I dropped everything and finally cleaned up... and I am quite happy again.

Yes, so this is supposed to be for Creative Estates... but since I'm not going, this one is MINE!

Sorry for the short week in photos... but I have worked like every night this week and it's going to be the same next week... so I am going to try to be better about it next week and give you all kinds of things to see!

Wednesday Stripes & Spots

Okay wow, so this week has been crazy busy and I haven't had time to do too much... in fact I am currently eating breakfast, reading an article for class and blogging about what I'm wearing - almost simultaneously... but not quite.

Any-whoo, this and Friday are my two favorite posts of the week... even though I've been skipping Friday lately - hopefully not this week! 

So today I decided I was going to wear my polka dot shirt... but I only have 3 navy cardigans, all of which have white stripes - how that happened I don't even want to think about... but alas, I am rocking the stripes with the polka-dots and hoping that it is an okay fashion thing to do? Honestly it's all the same to me.

Mind Blowing Fish Tacos!

Okay, maybe not "Mind Blowing"... but still absolutely delicious... especially with a nice bottle of beer, quite amazing.

What you need:
* about a pound of white fish: mahi-mahi (best best best), tilapia (cheapest, and 2nd best) or cod (not best choice).
* flour tortillas (or corn)
* avocado
* salsa
* sour cream
* cheese (cheddar or "Mexican Blend")
* limes
* panko bread crumbs
* 2 eggs
* flour
* oil (I use canola)
* 3 bowls, a bunch of paper towels, a plate and a saute pan

1. Cut your fish into small pieces - I usually go about 1-2 inch strips
2. Pour about 1/2 inch deep of oil into pan and turn to medium heat.
3. In your three bowls you will have 1 thing in each.

  • Bowl 1: Flour, salt, pepper, I also add garlic salt. (far right)
  • Bowl 2: the two eggs all scrambled up. (middle)
  • Bowl 3: the panko with more salt, pepper and garlic salt if you are feeling it. (far left)

4. When the oil is hot enough to fry, if you drop in a piece of breading it should dance, then you can start with the fish...



5. Take each piece of fish and dip it in bowl 1, then bowl 2 then bowl 3 and drop into the oil - should be about 1/2 under
6. Cook each side about 4 minutes then flip, the fish will be cooked through and the crust should be golden brown, take them out of the oil and put on the pile of paper towels you have waiting on the plate...
7. Take your tortillas and put in the ingredients.
     - My order goes
     - Tortilla, sour cream, fish, lime juice, cheese, avocado slices and salsa

New Glasses, Converse, Wednesday!

So today is day 2 of classes... and also I got new glasses this week so I am definitely rockin' them!  It's "cold" today, around 50, hence the sleeves.


P.S. Sorry this post is sooo short, I'm running behind today and have to leave for class, battle all those pesky undergrads for a parking spot!

Scallops with Parmesan & Tarragon Orzo

Yummy is what't for dinner!

Scallops with Parmesan & Tarragon Orzo
Scallops:
*  1/2 lb of large scallops (usually 4-6)
*  Butter (hmmm 3 tbsp?)
*  Garlic (minced or pressed)
-- Heat the pan on medium until hot, then add butter and garlic - cook until garlic turns golden
-- Rinse the scallops in water and dab dry with paper towel, 
-- Shake salt and pepper over both sides of the scallops and place in the pan
-- Cook the scallops for about 4 minutes on each side or until they are golden on the ends and no longer translucent in the middle.

Parmesan & Tarragon Orzo - aka, Heaven
* 1/2 box of Orzo pasta
* More butter (2-4 tbsp)
* Parmesan cheese (1/4-1/2 cup)
* Dried tarragon (a dash)
-- Cook the pasta until it is ready to your liking and drain
-- In the same pot add the butter, cheese, tarragon and some salt & pepper (Turn off heat)
-- Mix together until the butter and cheese have melted sticking most of the little grains to at least a few others (I'd say let the thing mingle for about 4-5 minutes, off the heat)

**Serve all of this with your favorite veggie

New Happenings

Yes, so I got bored with the same old thing... and decided to start another project that will just keep me busy. I have gone back to my roots, drawing... also, I have taken my ability to say ridiculous and inappropriate things and put that to good use!
